For the same reason positive points are assigned to low cards. Thus, in these counting systems, negative points are assigned to the high cards. When high cards are dealt, there will be less high cards remaining in the shoe, making the players less favorable in future rounds. Based on statistical evidence high cards (10s, Js, Qs Ks and aces) put the players at an advantage, while the low cards benefit the dealer more than the players.
The goal of card counting is to predict whether the players or the dealer have the advantage in the next round of cards. Card counting sounds very sophisticated to the general public however there are some simple ways that can be practiced by normal individuals like you and me.
